Roasted Chicken Drumsticks with Dill

Roasted Chicken Drumsticks are juicy, full of flavor and a family favorite. Marinated in with dill, vinegar, salt and pepper then cooked to perfection.

Ingredients

Ingredients:

  • 1/4 cup extra virgin olive oil
  • 1 tablespoon red wine vinegar
  • 1 tablespoon fresh dill chopped (or 1 teaspoon dried dill weed)
  • 1/1 teaspoon kosher salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon granulated garlic
  • 10 chicken drumsticks

Instructions

  • In a large bowl whisk together olive oil, dill, red wine vinegar, salt, pepper and granulated garlic.
  • Pat chicken dry with a paper towel. Add chicken to bowl and toss to coat. Cover and marinate for at least 2 hours or overnight.
  • Preheat oven to 375 degrees.
  • Place marinated chicken on a rimmed baking sheet (or a large glass dish) spaced 1 - 2 inches apart. Pour any remaining marinade over the top. Bake in the preheated oven for 30-45 minutes or until chicken is cooked through. Turn on the broiler for 1-3 minutes or until the skin turns golden brown.
  • Allow to rest for 10 minutes. Transfer to a serving platter and garnish with fresh dill, if desired. Serve.

Notes

It is important to space the chicken on the baking sheet so that air can circulate and brown the chicken better. If it is too close together, the chicken will steam in the oven and won't be as crispy.
