Savory Pumpkin Hummus

Ingredients

Ingredients:

  • 15 ounces garbanzo beans drained by reserve 2 tablespoons of liquid
  • 3/4 cup pumpkin puree
  • 2 cloves garlic
  • 1 tablespoon fresh thyme 1 teaspoon dried
  • 1 tablespoon fresh rosemary 1 teaspoon dried
  • 1/2 teaspoons salt
  • 3 tablespoons olive oil

Instructions

  • Combine garbanzo beans, pumpkin puree, garlic, thyme and salt together in a food processor. Puree until minced fine.
  • Add in reserved garbanzo bean liquid and 2 tablespoons olive oil. Puree until smooth. If too dry add remaining tablespoon of olive oil. Season to taste with salt. Cover and refrigerate for 30 minutes before serving.
