Ingredients
4slicesbacon cut into 1 inch pieces
1/2yellow oniondiced
3garlic cloves
1teaspoonblackening seasoning
14 ouncesandouille sausage cut into bit size slices
28ouncescanned great northern beans drained but not rinsed
1tablespoonfresh thyme leaves
salt and pepper
Instructions
Cook bacon in a large skillet over medium heat until browned. Transfer to a paper towel lined plate and set aside. Reserve 2 tablespoons of pan drippings.
Add in onions. Cook just until they start to soften, about 2 minutes. Add in sausage, garlic, thyme, blackening seasoning and most of the bean but reserve 1/2 cup.
Take the reserved beans and gently mash them with a potato masher (or fork).
Add the mashed beans to the skillet and cook until warmed through and thickened. Add bacon to pan. Season to taste with salt and pepper.
Notes
Andouille sausage is a bit spicy, if you'd like to limit the spice substitute smoked sausage or kielbasa. On the other hand, if you want to spice things up a bit substitute cajun seasoning for the blackening seasoning. Nutrition information for estimation purposes only.
