Creamy Cajun Tortellini is a decadent, spicy pasta dish that comes together in a flash. Cheesy tortellini, andouille sausage and bell peppers simmered in a creamy cajun sauce. 

When it comes to easy tortellini recipes, I have got you covered. One of my favorite weeknight time savers is fresh pasta. Especially fresh tortellini. All you need to do to cook tortellini is to boil it in a pot of water until it floats. Usually about 3 – 5 minutes. Toss it in sauce and you’re good to go. A quick and hearty meal on the table is less than thirty minutes.

What kind of sauce to put on tortellini?

Short answer: anything and everything.

You could coat tortellini in alfredo sauce, tomato sauce and even a butter sauce. I have used Pesto to coat tortellini and tossed it in a Puttanesca style sauce and now, I’m using it in Creamy Cajun Tortellini. The possibilities are endless.

This Creamy Cajun Tortellini is loaded with all kinds of goodies. It starts by sautéing bell peppers, onions and garlic in olive oil and butter. Next cheesy tortellini, andouille sausage are added to the mix. Then, a little sour cream, a splash of cream and some parmesan cheese make it super creamy. Finally, some cajun seasoning kicks the whole thing up a notch with a little spice.

When it comes to Cajun Seasoning, you could make your own. But if you don’t want to, cajun seasoning is pretty easy to find on super market shelves. It might also be called Blackened Seasoning or Cajun Blacken Seasoning. Keep in mind that many of them already contain salt, so I recommend tasting your dish before adding any salt.

Ingredients
  

Ingredients:

  • 20 ounces packaged 3 cheese tortellini
  • 2 tablespoons butter
  • 1 teaspoon olive oil
  • 2 green bell peppers diced
  • 1/2 medium yellow onion diced
  • 5 garlic cloves minced
  • 13 ounces andouille sausage sliced
  • 1 teaspoon Cajun seasoning
  • 1/2 cup heavy cream
  • 1/2 cup sour cream
  • 1 cup Parmesan cheese

Instructions
 

  • Cook tortellini according to package directions.
  • Meanwhile, melt butter and olive oil together in a large skillet over medium heat. Add in bell peppers, onion and garlic. Cook just until softened, about 3 minutes. Add in andouille.
  • Reduce heat to low and add in cajun seasoning, heavy cream and sour cream. Stir until the sour cream is mixed in well. Stir in parmesan cheese. Add in cooked tortellini and toss to coat.
