The opening of football season is tomorrow. This is big news in our home. Big news because football is always big in our home and even bigger news because our Hawks are playing. I’ve been trying to figure out what I am going to make for a few weeks. It’s that big of a deal.
While I have learned to love the game over the last few seasons, the real reason that I look forward to football season is the food. I mean come on. It’s dips. It’s wings. It’s pizza, dogs and burgers. Every kind of snack you could possibly want and probably shouldn’t eat but you do anyway because it’s football season and you need your energy as you root for your team when they win. Or a plate of nachos to cry into when they don’t. Food is a big part of football.
We adore pulled pork in our home and while it works in so many different recipes, to me, it just screams football food. So while, planning the menu for the big game, I knew I’d be using pulled pork. What I didn’t know was how I was going to showcase this favorite protein of ours. That is until I saw this recipe for Grilled Foil-Pack Cheesy Fries from Pillsbury on Pinterest. One look at that and I knew just what I was going to do, I was going to make BBQ Pulled Pork Tailgate Fries.
That’s right, all of the deliciousness of a BBQ Pulled Pork Sandwich on top of crispy crinkle cut fries (which by the way are THE best cut of fry). I decided to call these Tailgate Fries because these babies are perfect for your tailgate party. You simply cook the fries in mini-foil pouches on the grill until they are nice and crispy. Then you pile on the cheddar and pepper jack cheese and sweet BBQ pulled pork and let them cook a little longer until the cheese gets melty and delicious. Next, you top them with a quick homemade slaw and some green onions. And finally, you devour them with an ice cold beer. Sounds delicious, no?

Ingredients
- 2 cups finely shredded red cabbage
- 1/2 cup grated carrots
- 1/4 cup mayonnaise
- 1 teaspoon dijon mustard
- 1 teaspoon vinegar
- salt and peper
- 1 26 ounce bag frozen extra crispy crinkle cut fries
- 2 tablespoons canola or olive oil
- 1 1/2 cups shredded pepper jack cheese
- 1 1/2 cups shredded medium cheddar cheese
- 1/2 cup BBQ sauce
Instructions
- Combine all ingredients for coleslaw together in a bowl. Mix well and refrigerate until ready to use.
- Heat a grill for indirect heat to 450 degrees.
- Toss french fries with oil.
- Combine BBQ sauce and pulled pork.
- Tear off 4 12 inch pieces of aluminum foil. Crimp the ends together to make boats,. Divide french fries among the 4 boats so that they lay in a single layer. Cook on grill for 15 minutes. Turn and cook another 10 minutes or until golden brown and crispy.
- Divide cheese evenly among fries. Divide pork evenly among fries. Cook for 5 more minutes or until the cheese melts. Remove from grill top with coleslaw and green onions. Serve immediately.
