Sheet Pan Chicken Kebabs are a quick and easy weeknight dinner. These savory kebabs are great on their own or stuffed in a pita.
I’ve seen a variation of these Sheet Pan Kebabs in several viral videos on social media and decided that I just have to try them. And I am so glad that I did. My family absolutely loved how flavorful these are and I love how easy they are to make and how versatile they are.
There are many different kebabs through out the world. In the US we’ve got shish-kebabs that are made with meat and veggies. Asian style kebabs are usually made with beef, chicken and asian seasonings. For this recipe, we’re exploring the flavors of Middle Eastern cuisine with onions, garlic, cilantro and shawarma seasoning. And unlike traditional kebabs which are usually on skewers, these are made easy in a sheet pan.
Let’s talk a little bit more about what you’ll need to make them.
Sheet Pan Chicken Kebabs Ingredients:
GROUND CHICKEN: You can use ground white meat or dark meat for this recipe. Make sure that you buy plain ground chicken and not chicken sausage because that will have other seasonings that you don’t want.
ONION: Yellow onion works great for this recipe. You could also use red or sweet onion if that is what you have on hand.
GARLIC
OLIVE OIL
CILANTRO: If you don’t like cilantro you can omit it.
SHAWARMA SEASONING BLEND: This is a blend of seasonings like coriander, cumin, paprika, ginger, sumac, cinnamon and cloves. You can make your own but I don’t usually have all of the necessary spices on hand so I bought this blend (affiliate link). I can see myself using this on grilled meats, veggies or even sprinkled over french fries.

Step by Step Photos and Instructions:
Making these sheet pan chicken kebabs is so easy and one of the reasons that I love them so much. Follow along with these step by step photos and instructions.
Combine all ingredients together. Press into 1/2 inch thick rectangle and score with knife. Bake.
STEP #1: Preheat oven to 400 degrees. Line a 10×15 (or similar sized) sheet pan with parchment paper.
STEP #2: Combine all of the ingredients together in a bowl. Using clean hands mix until well combined.
STEP #3: Press meat into a rectangle about 1/2 inch thick onto prepared parchment paper. Make sure that its even all around.
STEP #4: Use a knife to score into 8 “kebabs”. This won’t cut all the way through them but will make them easier to cut once cooked.
STEP #5: Bake in preheated oven and cook for 10 minutes or until browned and cooked through. Slice through
You can serve these sheet pan chicken kebabs by themselves with some garlic rice or serve them with some warm pita in a gyro with some tzatziki spooned over the top.
Storage and Leftovers:
Store any leftovers in the refrigerator and use within three days.

Sheet Pan Chicken Kebabs are a quick and easy weeknight dinner. These savory kebabs are great on their own or stuffed in a pita.
Preheat oven to 400 degrees. Line a 10×15 or similar sized sheet pan with parchment paper or aluminum foil.
Combine all ingredients together in a bowl. Use clean hands to mix well.
Press meat mixture into 1/2 inch thick rectangle on prepared baking sheet. Use a knife to score 8 – 10 horizontal lines then one down the middle lengthwise.
Bake in preheated oven for 10 – 12 minutes or until cooked through and browned.
