All the comfort of a turkey dinner turned into a hot sandwich. An Open Face Turkey Sandwich is a great way to turn those Thanksgiving leftovers into lunch!

If you’re looking for a delicious, ultra comforting way to use up some of your Thanksgiving leftovers. You have got to try making a Hot Turkey Sandwich. It is probably the easiest, not to mention one of the most delicious, ways to use up turkey, mashed potatoes and gravy.

I was first introduced to a hot turkey sandwich when I was a kid visiting my grandpa. He took us to this diner that he used to frequent. It was one of those old school diners that had all the comforting American classics. As a self-proclaimed mashed potato connoisseur, the open face turkey sandwich was the thing that caught my eye. And boy, it did not disappoint.

Calling this a “recipe” is a bit of a stretch. It’s really just a quick and easy way to repurpose Thanksgiving leftovers. But as many may not have thought about this idea, I thought I’d share!

Let’s talk about what you’ll need:

Ingredients for Open Face Turkey Sandwich:

  • GRAVY: You’ll need some leftover gravy to simmer the Turkey in.
  • TURKEY: Hot turkey sandwiches are typically served with sliced turkey but shredded turkey would work as well.
  • BREAD: Use whatever bread is your favorite. A thick slice is best to really soak up all that gravy.
  • MASHED POTATOES: Leftovers again! It may sound weird to add them to a sandwich but trust me!

How to make Open Faced Sandwich:

An open faced sandwich is really just a sandwich minus the top slice of bread. They are usually made with one slice bread and a hearty savory topping.

STEP #1: Heat gravy and turkey slices together in a pan until warmed through. Season to taste with salt and pepper.

STEP #2: In another pan, reheat mashed potatoes until they are warmed through.

STEP #3: To assemble sandwiches, place a slice of bread onto a plate. Spoon 1/4 of the mashed potatoes on top. Then place a couple slices of turkey on top and pour gravy over the whole thing.

Like I said, this isn’t much of a “recipe” but boy is it a delicious way to use leftover turkey. It’s all comfort in one bite!

Ingredients
  

  • 1 cup gravy
  • 1 pound sliced roasted turkey
  • 4 slices french bread
  • 2 cups mashed potatoes

Instructions
 

  • Heat gravy and turkey slices together in a saucepan until warmed through.
  • Reheat potatoes until they are warmed through.
  • To assemble the sandwiches place 1/2 cup of potatoes on a slice of bread. Top with a few slices of turkey and pour a little gravy over the top. Serve immediately.

Notes

This recipe should yield enough to make 4 sandwiches but you can really make as many or as few as you like.
