You guys. This salad. THIS. SALAD. I’m not kidding when I say that I could live on it. I can’t decide what is my favorite part about it. The peppery arugula? So good. The sweet summer tomatoes marinated in olive oil and garlic? Also amazing. Creamy Burrata? Gimme it all. Slices of garlic toasts to scoop it all up with? HOLD ME.
It is the perfect combination whether you’re serving it as an appetizer, lunch or a light summer dinner.

Arugula Burrata Salad Ingredients:
One of the greatest things about this salad is how few ingredients there actually are. This allows each ingredient to really shine.
CHERRY TOMATOES: Sweet cherry tomatoes are perfect for this.
EXTRA VIRGIN OLIVE OIL: To marinate the tomatoes.
ARUGULA: Arugula is perhaps my favorite green. It is crisp and peppery and makes a lovely salad.
BURRATA CHEESE: If you love mozzarella cheese you have got to try burrata cheese. Burrata is cheese with a solid outer layer or mozzarella cheese but a creamy inner layer with fresh mozzarella curds and cream.
BAGUETTE SLICES/GARLIC: I loved serving this with garlicky toasts to scoop of all of the tomatoes, arugula and burrata.

Step by Step Photos and Instructions:
Making this Arugula Burrata Salad is just as easy as making any other salad. It is best to make the tomatoes a little bit in advance so all of the flavors have a chance to mingle but that’s the hardest part!
Marinate tomatoes. Make garlic toasts. Assemble salad.
STEP #1: Combine tomatoes, olive oil and minced garlic together in a bowl. Set aside for at least 20 minutes to allow the flavors to mingle.
STEP #2: Make the garlic toasts by placing the crostini slices on a baking sheet and broil for 1 minute. Rub with whole garlic clove and put back under the broiler just until golden brown. About another minute.
STEP #3: Assemble the salad. Place arugula in a shallow bowl, or on another serving platter. Place one burrata cheese ball in center on arugula and drizzle tomatoes over the top. Break open another burrata ball and place the pieces around the salad. Serve with the toasts on the side or scattered around the salad.
Storage and Leftovers:
Like most salads, this doesn’t keep very well. However, you can make the tomatoes in advance and simply remove from the refrigerator to allow to come to room temperature before serving.
