Chorizo Dip

Chorizo Dip is a party must have! Loaded with chorizo, refried beans and cheese. Serve it hot with your favorite chips!

Looking for the perfect game day appetizer? Then look no further than this Hot Chorizo Dip. Think of it as a kicked up bean dip. It’s cheesy. It has chorizo and spicy jalapeños. Serve it hot with your favorite chips and it is sure to be the hit of your party.

Just in case you don’t know, Chorizo is a type of sausage that originated in the Iberian Peninsula. It is a highly seasoned sausage made with pork. It is very popular in both Spanish and Mexican cooking. Chorizo is one of our favorite proteins. I use it often, whether I’m making Chorizo Tater Tot Casserole, stuffing it in some Bacon Wrapped Jalapeños or Chorizo Black Bean Taquitos.

It also happens to be epic when you mix it with refried beans and turn it into a Chorizo Dip. Lets talk about what you need to make it.

Chorizo Dip Ingredients: 

You only need a handful of ingredients to get Chorizo dip on your party table! 

Chorizo Dip Ingredients
  • CHORIZO: Chorizo is typically found two different ways: cured and dried or raw. For this recipe, you’ll use raw chorizo. Recently Johnsonville and even the butchers at well stocked grocery stores have started selling chorizo, I prefer these brands to the chorizo sold in tubes. The texture is better. 
  • ONION: Yellow or white onion will work the best. 
  • JALAPEÑO: This gives the dip a bit of heat. If you’re worried that it might be too spicy, you can remove the seeds and veins from the inside of the jalapeño. That is where the heat is. (To learn more about chile peppers check out my guide to chile peppers.)
  • REFRIED BEANS: Regular refried beans are what I use. You can use jalapeño refried beans if you want it a bit spicier. 
  • CHEDDAR CHEESE: I always prefer to grate my own cheese. It just melts better! 
  • CUMIN: Adds a smokiness to the dip.
  • GREEN ONIONS: Add a slight oniony flavor and a pop of color to the top of the dip. 

Step by Step Photos and Instructions: 

This Chorizo dip is easy to make! It can be made in one pan on the stove then transferred to a baking dish just to melt the cheese on top. Follow along with these step by step photos to see just how easy it is. 

STEP #1: Brown the chorizo in a large skillet. Cook until cooked through. Drain but reserve 1 tablespoon of pan drippings. Set chorizo aside until ready to use. 

STEP #2: In the same pan that you cooked the chorizo in, cook jalapenos and onions until softened. About 2 – 3 minutes. Return the chorizo to the pan, add in the beans, cumin and half of the cheese. Cook until beans are warmed through and cheese has melted. 

STEP #3: Add the chorizo dip to a small baking dish. Top with remaining cheese and place under the broiler just until the cheese is melted, 1  –  2 minutes. Sprinkle with green onions, serve hot.

What do you serve with Chorizo Dip:

This Chorizo dip is great when served with tortilla chips. You could even try making your own Homemade Tortilla Chips or Homemade Pita Chips.

Storage and Leftovers:

This dip reheats well! If you want you can put some more cheddar cheese on top so that you have a cheesy top. Then cover and bake at 325 for 20 – 25 minutes or until warmed through. Uncover and turn on the broiler for 1 – 2 minutes to melt the cheese on top.

Ingredients

  • 16 ounces chorizo
  • 1/2 medium onion diced
  • 1 jalapeno diced
  • 14.5 ounces refried beans
  • 1/4 teaspoon ground cumin
  • 2 cups shredded cheddar cheese
  • 2 green onions diced

Instructions
 

  • Turn on the oven broiler.
  • In a pan cook chorizo until cooked through. Transfer to a plate. Reserve 1 tablespoon of pan drippings.
  • In the same pan that you cooked the chorizo in cook the onion and jalapenos just until softened, 2 - 3 minutes. Return chorizo to the pan and stir in refried beans, ground cumin and 1/2 of the cheddar cheese. Cook until the beans are warmed through and the cheese has melted. Transfer dip to a oven safe small baking dish. Top with remaining cheese and place under the broiler for 3 minutes or until cheese is melted and bubbly.
  • Remove from oven sprinkle with green onions. Serve hot.

Notes

Can be made ahead of time and reheated in the oven. Cook covered at 325 until warmed through. Broil until cheese is melted.

    This looks amazing!! I’m so excited to make it! I from California and live in Italy so sometimes I get hungry for some hometown flavors…like Chorizo! I can’t wait to make this! I think I might put it on a tostada with some diced avocado and maybe a dollop of sour cream! Everything is better with avocado! I love it so much but its expensive here so every time I have some, its a treat! Thanks for this great recipe!
