This Chicken and Green Beans Recipe is the perfect weeknight dinner. It’s a one pot meal that is low carb, full of flavor and easy to make.

Ever find yourself in a rush to get dinner on the table? You know when it’s dinner time, everyone is hungry and you need to get a meal on the table fast? If so this Chicken and Green Bean Recipe is exactly what you need. 

It’s got your protein and your veggies all cooked in one skillet. It can be on your dinner table in 20 minutes. My whole family loved this recipe, even my pickiest kiddo.

The ingredients you need:

  • CHICKEN THIGHS: I like to use boneless skinless chicken thighs in this recipe. They are tender, less expensive than chicken breasts and cook quickly. You can substitute boneless, skinless breasts if you prefer white meat.
  • GREEN BEANS: You’ll need to use fresh green beans in this recipe. Don’t use canned or frozen.
  • CHERRY TOMATOES: Grape tomatoes would work as well. Just smaller tomatoes that you can cut in half.
  • DRIED BASIL: You’ll be using this to season the chicken before cooking so you want to use dried instead of fresh.
  • GARLIC
  • YELLOW ONION: Sliced thin.
  • CHICKEN BROTH: Use low sodium so that can control the salt content of the final dish.
  • SALT AND PEPPER
  • OLIVE OIL

How do you make Chicken and Green Beans:

One of my favorite things about this dish, is how incredibly easy it is to make. You only need one pan! So no only is it easy to make, clean-up is easy too!

  • STEP #1: Season chicken with 1/2 teaspoon salt, 1/2 teaspoon black pepper and basil. Toss to coat.
  • STEP #2: Heat olive oil in a large skillet over medium heat. Add onions and garlic. Cook 3 minutes. Add in chicken and cook just until browned. Add in green beans, remaining salt and pepper and chicken broth. Cover and cook for 10 – 15 minutes or until beans are soft but still firm and chicken is cooked through.
  • STEP #3: Remove the lid and add the tomatoes. Cook 2 minutes or until tomatoes are warmed through and softened slightly. Season to taste with salt and pepper.

If you’re watching carbs this dish is great on it’s own. My family really enjoyed it served over garlic rice.

Ingredients

  • 4 boneless (skinless chicken thighs diced)

  • 3/4 teaspoon black pepper (divided)
  • 1/2 teaspoon dried basil
  • 2 tablespoons olive oil
  • 1/2 onion sliced
  • 3 cloves garlic (minced)
  • 1 pound green beans trimmed
  • 1/3 cup chicken broth
  • 1 cup halved cherry tomatoes

Instructions

  1. Season chicken with 1/2 teaspoon kosher salt, 1/2 teaspoon black pepper and basil. Toss to coat.
  2. In a large skillet heat olive oil over medium heat. Add onion and garlic. Cook 3 minutes. Add in chicken and cook just until browned. Add in green beans, remaining kosher salt, black pepper and chicken broth. Cover and cook 10 - 15 minutes or until beans are softened but still firm and chicken is cooked through. Stir in tomatoes cook 2 more minutes. Serve.

    Added bone broth and Quinoa before adding the tomatoes and cooked and tell the quinoa was 90% done and then added the cherry tomatoes… Was delicious!!
