Grilled Pork Chops

With three ingredients, 30 minutes and a grill, you can get the juiciest grilled pork chops. They are easy, family friendly and perfect for your next grilling session. 

I am SO ready to grill all the things. What about you? There is something about summer that just screams grill. Probably because it’s far too hot to be cooking inside. However, in the spirit of honesty, here in the Pacific Northwest we’ve been known to grill in the rain and snow so I’m actually always ready to grill all the things. 

But when it comes to the grill a lot of people tend to limit themselves to burgers and dogs but I am here today to tell you that pork chops are absolutely FANTASTIC on the grill too. And this Grilled Pork Chops Recipe, with only 3 ingredients is so easy and so delicious, you’ll be making it on repeat. 

Let’s talk about what you’ll need to make it. 

Grilled Pork Chops Ingredients: 

  • THICK CUT BONE-IN PORK CHOPS: For perfectly cooked grilled pork chops, you are going to want thick cut bone-in pork chops. When I say thick cut, I mean about 1 – 1 1/2 inch thick. Bone-in pork chops are the best because they tend to be more flavorful. Bone-in pork chops aren’t as lean as their boneless counterparts and we all know that fat = flavor. The bone also helps prevent overcooking because it slows down how fast the meat cooks.
  • BLACKENING SEASONING: Blackening seasoning is a blend of herbs and spices like paprika, garlic, thyme, salt and pepper. You can make your own Homemade Blackening Seasoning or you can buy a jar in the spice aisle of your grocery store. 
  • OIL: This will help brown the meat as it cooks. You can use canola oil, avocado oil or olive oil. Whichever you have on hand will be fine. 

At what temperature are pork chops done?

For a long time, pork was considered done when it reached 160. In the last few years however, the recommended temperature has changed. Grilled Pork Chops are cooked when they reach an internal temperature of 145 degrees. They will have a blush of pink to them.

Step by Step Photos and Instructions: 

One of the reasons my family loves these so much is because they are so easy to make. 

  • Step #1: Preheat a grill to 500 degrees.
  • Step #2. Brush both sides of pork chops with avocado oil (or other high heat oil). Season both sides with blackened seasoning. Blackened seasoning is similar to cajun seasoning except that cajun seasoning is a bit spicier. If you want your pork chops to have a little extra kick, substitute cajun instead.
  • Step #3: Grill pork chops 1 – 2 minutes per side at high heat to sear. Turn the grates the pork chops are on off while leaving the others on. This will cook the pork chops with indirect heat. Cook using indirect heat for 15 minutes or until a meat thermometer registers 145 degrees.
  • Step #4: Let the pork rest for 10 minutes before serving. Resting is important. While meat is resting, the juices redistribute and results in juicier meat. Cut too early and all of the juices will run out.

Storage and Leftovers:

Store any leftovers in the refrigerator and use within 3 days. You can reheat in a warm oven, on the grill or a quick zap in the microwave. Keep in mind that they might be a bit tougher after reheating.
