And let me tell you, this Cherry Chocolate Chip Cookie Crisp makes my cherry and chocolate lovin’ heart sing.

When it comes to fruity desserts, I love a good crisp topping. Most desserts that are called “crisps” or “crumbles” have a topping that is made with butter, sugar and oats. This Cherry Chocolate Chip Cookie Crisp is different, however, because instead of a traditional topping, it has a buttery chocolate chip cookie topping. How amazing is that? 

Let’s talk about what you’ll need to make it. 

  • FRESH SWEET CHERRIES: I love to make this in the summer with fresh cherries! It can be made with frozen cherries but make sure that you use them frozen. Thawing can release excess moisture that can mess with the final consistency of the dish. 
  • SUGAR:  To help sweeten the tart cherries. 
  • CORNSTARCH: To help thicken the liquid from the cherries as they cook. 
  • CHOCOLATE CHIP COOKIES: I used Pepperidge Farm Chocolate Chip Cookies to make this really easy but if you have homemade chocolate chip cookies that are on their way out and getting a little crunchy, this would be the perfect way to use them up! 
  • BUTTER: To help make the buttery crisp topping. 
  • ICE CREAM: Optional but always my favorite way to serve it.

Like any crisp, this Cherry Chocolate Cookie Crisp is super easy to make! Follow along with these step by step photos and instructions and I’ll guide you every step of the way. 

  • STEP #1: Preheat the oven. Butter a 9-inch pie dish. 
  • STEP #2: Combine the pitted cherry, sugar and corn starch together in a bowl. 
  • STEP #3: In another bowl combine the crushed cookies and butter. Cut butter into the cookies until the mixture is crumbly. 
  • STEP #4: Bake, allow to cool slightly, top with vanilla ice cream and serve. 

Storage and Leftovers: 

Any leftovers can be stored covered at room temperature. I like to warm it a bit in the microwave before topping with vanilla ice cream and serving.

Ingredients

  • 3 1/2 cups sweet cherries (pitted and stems removed)
  • 1/4 cup granulated sugar
  • 1 tablespoon corn starch
  • 7.75 ounces chocolate chip cookies (about 8 large cookies), crushed
  • 6 tablespoons cold butter (cut into pieces)
  • Vanilla ice cream for serving

Instructions

  1. Preheat oven to 350 degrees. Butter a 9 inch pie pan.
  2. In a bowl combine cherries, sugar and corn starch. Toss to coat cherries.
  3. In another bowl combine crushed cookies and butter. Cut butter into cookies until mixture is crumbly.
  4. Spread cherries into the buttered pie pan. Sprinkle cookie crumble over the top.
  5. Bake in preheated oven for 30 - 35 minutes or until bubbly.
  6. Allow to cool for several minutes. Serve warm with vanilla ice cream.

    I am not sure that they would work in this because you want them to release their liquid as they cook. Hope this helps!

    Do you think pitted dried cherries would work? I’ve used them in brownies and the result is to die for, but I don’t want to try them in this if you think they might not work.
