Fresh Tomato Relish made with tomatoes, onions, sugar, fresh dill and celery seed. Great on sandwiches, hot dogs and burgers!

When the end of summer rolls around and you find yourself with an abundance of tomatoes, you can make things like pico de gallo, tomato jam and oven roasted tomatoes. Today I am sharing another recipe that you can make with your fresh tomatoes: Tomato Relish.

Generally relishes, like this Green Tomato Relish are cooked, this recipe however uses fresh ingredients that aren’t cooked but instead allowed to marinate together in the refrigerator. The result is a sweet, tangy relish with a burst of dill flavor. You’re going to love it!

Let’s talk about what you’ll need to make it.

Tomato Relish Ingredients:

  • TOMATOES: You can do a blend of fresh tomatoes for this recipe. I happened to have a few of my homegrown tomatoes as well as some campari tomatoes from the store so I simply diced them both up for this recipe and it worked beautifully.
  • ONIONS: Yellow or white onions will work best in this recipe.
  • GRANULATED SUGAR: Adds sweetness.
  • CELERY SEED: Will add that classic relish flavor.
  • RED WINE VINEGAR: Adds acidity. You can also use white wine vinegar or distilled vinegar.
  • FRESH DILL: This will add an herby brightness.
  • CRUSHED RED PEPPER: For a bit of heat. Optional but a nice addition.
  • SALT

Step by Step Photos and Instructions:

Making this Fresh Tomato Relish could not be any easier. The biggest thing is to make sure that you dice the tomatoes and onions small and try to keep them the same size.

After that all you need to do is combine everything together in a bowl, mix and let sit for at least an hour.

Storage and Leftovers:

Store any leftovers in the refrigerator and use within a couple of weeks.

Ingredients
  

  • 1/2 cup yellow onion diced
  • 1 cup tomatoes diced
  • 1 tablespoon fresh dill
  • 1 teaspoon salt
  • 1/2 teaspoon granulated sugar
  • 1/4 teaspoon celery seed
  • 1/8 teaspoon crushed red pepper can add more if you want it a bit spicier

Instructions
 

  • Combine all ingredients together in a bowl and mix well. Allow to set for at least 1 hour. Store in the refrigerator.
