Champagne Vinaigrette is a tangy salad dressing made with champagne vinegar, olive oil, shallots, dijon mustard and a touch of honey. And it’s so easy to make!
Making your own salad dressing is so easy, it is one of my favorite things to do. When I am walking down the salad dressing aisle at the grocery store, time and again I find my hand on a bottle then think, you know what? I can make this. Whether it’s creamy buttermilk ranch dressing, caesar or a vinaigrette like this Champagne Vinaigrette, once you start making your own dressing, you’ll be doing it all the time.

Vinaigrettes are great because they can be complex or simple. They can have several ingredients or just a few. This one falls right in the middle. Most of the ingredients you’ll likely have on hand already. The one that might be more difficult to find is the champagne vinegar.
Let’s talk about all the ingredients you’ll need:
Champagne Vinaigrette Ingredients:
- EXTRA VIRGIN OLIVE OIL: When making vinaigrette, I like to make sure that the olive oil is the highest quality I can get because the flavor is really going to shine through.
- CHAMPAGNE VINEGAR: The star of the show. It is a pale vinegar made with, you guessed it, fermented Champagne. It is lighter and not as harsh as distilled vinegar. If you absolutely cannot find it, you can use white wine vinegar, but you may need to add a bit more honey to balance it out a bit.
- SHALLOT: I love adding shallots to vinaigrettes. They add a subtle onion flavor without overpowering the dressing.
- DIJON MUSTARD: In addition to adding a tangy flavor to the dressing, dijon mustard helps emulsify the oil and vinegar together.
- GARLIC: Because the garlic will be raw in this dressing, it is important to not overdo it. One small clove will be just enough. Use a garlic press or mince it very fine.
- SALT/BLACK PEPPER

Step by Step Photos and Instructions:
Making Champagne Vinaigrette is incredibly easy, aside from the few ingredients the easy of making is one of the reasons I love making vinaigrettes at home.

STEP #1: Whisk together the vinegar and salt to help the salt dissolve.
STEP #2: Add in the shallot, dijon mustard, honey, garlic and pepper. Whisk well.
STEP #3: Slowly drizzle in olive oil and whisk until emulsified.
Alternatively, you can do this in a small jar. Simply shake vigrousouly until the dressing is emulsified.
Storage and Leftovers:
This only makes a little over 1/3 cup of dressing so you may or may not have leftovers. If you have any, store them in a sealed jar in the refrigerator. Olive oil will coagulate in cold temperatures so just allow it to come to room temperature before serving.
