  • FROZEN SPINACH: Make sure that the frozen spinach is well thawed and any excess water is removed with paper towels.
  • ARTICHOKE HEARTS: Canned artichoke hearts in water not marinated artichoke hearts. Marinated artichoke hearts will add other flavors to the dip.
  • SHALLOTS: Will add subtle onion flavor.
  • GARLIC: I prefer to use freshly minced garlic.
  • MAYONNAISE
  • SOUR CREAM: Adds creaminess and a bit of acidity.
  • MOZZARELLA/ PARMESAN: I recommend grating both cheeses yourself for the best flavor and texture of the dip.
  • CREAM CHEESE: Helps make the dip rich and creamy.

What makes this Crockpot Spinach Artichoke Dip so perfect for parties is that it is easy to make and by turning the slow cooker to warm after it cooks it’s party ready whenever your guests arrive.

  • STEP #1: Place spinach in paper towels and wring out any excess water.
  • STEP #2: Combine spinach, shallots, garlic, artichoke hearts, mayonnaise, sour cream, mozzarella and parmesan together in a 2QT crockpot. Mix until well combined.
  • STEP #3: Place the cream cheese on top of the other ingredients. Cover and cook on low for 1 1/2 – 2 hours. Stir after 1 hour. Once done and melted, season to taste with salt, turn crockpot to warm for serving. Serve with baguette slices or tortilla chips.

Ingredients

  • 12 ounces chopped frozen spinach (thawed )
  • 13.75 ounces quartered artichoke hearts (drained and chopped )
  • 1 1/2 cups shredded mozzarella
  • 1/2 cup shredded parmesan cheese
  • 6 cloves garlic (minced )
  • 1/4 cup shallots (minced )
  • 2 tablespoons mayonnaise
  • 1/4 cup sour cream
  • 8 ounces cream cheese ( )

Instructions

  1. Place thawed spinach in paper towels and squeeze out any excess moisture.

  2. Place spinach, artichoke hearts, mozzarella, parmesan, garlic, shallots, mayonnaise and sour cream in a small crockpot (I used a 2 quart). Mix well.

  3. Place cream cheese on top of other ingredients. Cover and cook on low for 1 1/2 - 2 hours. After 1 hour, stir to mix the cream cheese into the other ingredients. Season to taste with salt.

  4. Keep setting on warm for serving.
