Curry Rice

Jazz up your rice game with this flavorful curry rice! This Jasmine rice seasoned with curry powder, onions, garlic and chicken broth makes a great side!

We eat a lot of different curried recipes in our house. It is a favorite of mine and the family. Whether I’m making classic Chicken Curry, Crispy Curry Chickpeas or making a cozy Coconut Curry Pumpkin Soup, anything curry always gets gobbled up and there are rarely any leftovers.

This Curry Rice is my newest curried recipe. I was looking for a simple side dish that was a little different than traditional steamed rice to serve along side some garlic grilled chicken. This was perfect. It was easy, came together in about 20 minutes and best of all, the family loved it. And you guessed it, no leftovers.

Let’s talk about what you’ll need to make it.

Curry Rice Ingredients:

  • OLIVE OIL: To saute the onions, garlic and rice.
  • ONION: Will add a subtle onion flavor as well as a bit of texture to the rice.
  • GARLIC: I use a couple cloves to add a little bit of a garlic flavor. You can add more or less depending on your tastes but keep an eye on it when sautéing it because you don’t want it to burn.
  • CURRY POWDER: You can use your own homemade curry powder blend, or you can use your favorite. I’m a fan of Spice Island Curry Powder (affiliate link) and if you want to kick things up even more try a Madras Curry Blend.
  • JASMINE RICE: You’ll need a long grain white rice, like Jasmine for this recipe. You can also use long grain white rice or basmati. Do not substitute brown rice as it won’t cook the same.
  • CHICKEN BROTH: Cooking the rice in chicken broth will add much more flavor than simply using water.

Step by Step Instructions and Photos:

Making this curry rice only has one more step than steaming rice. You just need to cook the onions, garlic, rice and curry powder for a couple of minutes before adding the broth. This is important for a couple reasons. One, it will help soften the onions and give the rice more flavor. And two, sautéing the rice will help reduce some of the starch from the outside for the rice so you’ll have a better texture.

STEP #1: Heat olive oil in a large pot over medium heat. Once warm add onions. Cook just until they start to soften, 2 – 3 minutes. Add in garlic, curry powder and rice. Cook 1 – 3 minutes or until the rice is translucent.

STEP #2: Pour in the chicken broth and stir. Bring to a boil. Reduce heat and cook for 20 minutes. Allow to set for 5 minutes then fluff with a fork. Serve.

Storage and Leftovers:

Store any leftovers in the refrigerator and eat within a few days. You can warm on the stove or in the microwave.

Ingredients
  

  • 2 tablespoons olive oil
  • 1/2 cup yellow onion diced
  • 2 garlic minced
  • 1 tablespoon curry powder + 1 teaspoon
  • 2 cups jasmine rice
  • 3 cups chicken broth

Instructions
 

  • Heat olive oil in a large pot over medium heat. Once warm add onions. Cook just until they start to soften, 2 – 3 minutes. Add in garlic, curry powder and rice. Cook 1 – 3 minutes or until the rice is translucent.
  • Pour in the chicken broth and stir. Bring to a boil. Reduce heat and cook for 20 minutes. Allow to set for 5 minutes then fluff with a fork. Serve.

Notes

You can use any long grain white rice for this recipe. Don’t use brown rice as it requires different cooking times.
