Roasted red potatoes are my go-to side dish. Savory and crispy on the outside, buttery and soft inside. They are the perfect easy side dish for every meal. 

Roasted potatoes are a classic for a reason. They get rave reviews every time I make them. From both kiddos and adults a like. And not to mention, they are easy which makes them the perfect go-to side dish for busy weeknights.

What you’ll need:

RED POTATOES: Obviously. You can buy regular sized or baby sized. The regular size I recommend cutting into quarters while the baby size should be cut in half.

SEASONINGS: These potatoes are simply seasoned. All you need is salt, pepper, granulated garlic and dried parsley.

AVOCADO OIL: I have been using avocado oil lately because it can stand up to higher smoke points. With that said, if you don’t have any on hand, you could use olive, vegetable or canola.

NONSTICK SPRAY: Despite the oil in on the potatoes, non-stick spray is really needed to make sure that the potatoes don’t stick to the pan so that you can stir them.

How to make roasted potatoes crispy in the oven?

I used to think that you had to roast potatoes at a high heat to get them crispy on the outside. But that just usually left me with over done potatoes. Sure they were crispy on the outside, but they were also pretty crispy on the inside. By cooking these potatoes at a lower temperature and then broiling at the end to get the brown outside, you are left with perfectly crispy potatoes outside and fluffy, buttery potatoes inside.

What temperature do you roast red potatoes in the oven?

For this recipe you will want to roast the potatoes at 375 degrees. Cook them for 15 minutes, stir them and cook them for another 10 minutes. Finally, to get the perfect crisp, turn on the broiler for just a few minutes. The results are perfection.

Just look at that crispy outside!

DES’ TIP: Roast red potatoes at a lower temperature for a tender inside and then broil the last few minutes for a crispy outside.

How do you store and reheat the leftovers?

You can store any leftover potatoes in a sealed container in the refrigerator. To reheat them simply wrap them in aluminum foil and bake them in at 375 until warmed through.

Whether you are making flat iron steak, fried cod, or salmon with capers, roasted red potatoes are the perfect side dish solution for your dinner. You can even dip them in White BBQ Sauce! Your family will love them and you’ll love how easy they are to make.

Ingredients

  • 4 - 5 medium red potatoes (diced)
  • 1 teaspoon of salt
  • 1 teaspoon of pepper
  • 1 teaspoon granulated garlic
  • 1/2 teaspoon dried parsley
  • 2 tablespoons avocado oil
  • Nonstick spray

Instructions

  1. Preheat the oven to 375 degrees.
  2. In a medium bowl add all of the ingredients, except nonstick spray. Stir to combine.
  3. Spray a cookie sheet lightly with nonstick spray.
  4. Once oven is preheated place the potatoes in a single layer on the cookie sheet and cook on the middle rack.
  5. After 15 minutes stir the potatoes, being careful to return them to a single layer and cook for 10 more minutes.
  6. After the 10 minutes turn on the broiler and broil until golden brown, usually about 3-5 minutes.

    I made these roasted red potatoes and they came out soooo yummy….the center of the potato was creamy yet the outer portion was golden brown and crispy….I only used olive oil, sea salt and rosemary…..I have made roasted red potatoes before but using your method they were dreamy! Passing this on to my daughter!
