Pumpkin Chocolate Chip Cookies are studded with chocolate chips, topped with chocolate ganache and make a fabulous fall treat!

Chocolate and pumpkin might not be the most common combination but it has been one of my favorite combos for years. Like with this Pumpkin Cake with Chocolate Ganache and these Pumpkin Chocolate Chip Bars.  These Pumpkin Chocolate Chip Cookies are a combination of both of these desserts. They take the chocolate chips from the bars and the smooth chocolatey ganache from the cake and turn it all into one delicious fall dessert. 

Let’s talk about what you’ll need to make them. 

Pumpkin Chocolate Chip Cookies Ingredients: 

You will need all of the usual chocolate chip cookie ingredients when making these cookies. You’ll need: flour, butter, baking soda, eggs, vanilla, chocolate chips and salt. You’ll also need: 

  • BROWN SUGAR I prefer to use brown sugar only in this recipe because it makes the cookies more moist than granulated sugar alone. 
  • CINNAMON: To add warm, sweet flavor.
  • PUMPKIN PUREE: Make sure that you are using pumpkin puree, not pumpkin pie mix, when making these cookies. Pumpkin Pie mix will have addition ingredients that you don’t want in this recipe. 
  • HEAVY CREAM/DARK CHOCOLATE CHIPS: The only two ingredients you’ll need to make a decadent chocolate ganache. 

Step by Step Photos and Instructions: 

Making these Pumpkin Chocolate Chip Cookies is just as easy as making regular chocolate chip cookies, with the simple extra step of topping them with ganache. 

  • STEP #1: Cream together butter and brown sugar. Add in eggs and vanilla. 
  • STEP #2: In another bowl combine dry ingredients together until mixed well. Slowly fold into the wet ingredients. Beat in pumpkin puree and chocolate chips. 
  • STEP #3: Scoop heaping tablespoons of batter onto a cookie sheet and bake. I used a cookie scoop for this. Allow to cool completely. 
  • STEP #4: After cookies have cooled, make ganache. Dip the top of the cooled cookies into the ganache. Allow to harden a couple of minutes and serve. 

Storage and Leftovers: 

Due to the ganache it is best to store these cookies in the refrigerator. They’ll be the freshest for a few days.

Ingredients

Pumpkin Chocolate Chip Cookie Ingredients:
  • 1/2 cup unsalted butter (softened)
  • 1 1/2 cups packed brown sugar
  • 2 eggs
  • 1 teaspoon vanilla
  • 2 1/4 cup all purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon cinnamon
  • 1/4 teaspoon salt
  • 3/4 cup pumpkin puree
  • 12 ounces semi-sweet chocolate chips
Ganache Ingredients:
  • 2/3 cup heavy cream
  • 3/4 cup dark chocolate chips

Instructions

  1. Preheat oven to 350 degrees.
  2. In the bowl of a stand mixer cream together butter and brown sugar until light and fluffy. Beat in eggs one at a time. Beat in vanilla.
  3. Combine flour, baking soda, cinnamon and salt together in a bowl. Beat into wet mixture. Beat in pumpkin puree and chocolate chips.
  4. Scoop heaping tablespoonfuls of dough onto a cookie sheet 1 inch apart. Bake in preheated oven for 12 minutes.
  5. Remove from oven allow to cool a couple minutes on the cookie sheet. Transfer to a cooling rack to cool completely.
  6. Once cool, make ganache by combining chocolate chips and heavy cream together in a bowl. Microwave for 30 seconds. Stir. If chocolate isn't melting, microwave for another 30 seconds. Stir. Let stand one minute and stir until the mixture becomes glossy.
  7. Dip the cooled cookies into the chocolate ganache. Place on a piece of wax paper until the ganache hardens. Serve.
