It’s no secret that I love potatoes. Roasted Red Potatoes, Homemade Mashed Potatoes, and of course fries. I’ll eat them anyway you give them to me, and when they have a special place in my heart that’s even better.

Call them potato wedges or jo jo potatoes, these fluffy seasoned potatoes are a favorite around here.

Crispy Jojo Potatoes are seasoned and baked to perfection!

I have some pretty fond memories of jojos . Way back when Ryan and I were first dating, he would come over to my mom’s house on lazy summer days and we would walk ourselves all the way to the grocery store hand in hand the whole way.

Once we got there we would buy ourselves some chicken tenders and jojos, with extra ranch of course. These outings were our thing.

Now that we’re married, chicken tenders and jojos is still one of our favorite meals, except now we make it at home.

Why are they called jo jo potatoes?

After doing a bit of research the, it seems as if there is no real rhyme or reason to why these fluffy potato wedges are called jojos. The name seems to originate in the Pacific Northwest. I grew up here, with jojos always on the menu so it seemed weird to think that they aren’t called that everywhere.

Oven Baked Potato Wedges

But whatever you call then, these seasoned potato wedges are the perfect side dish for all the things.

Most jojos that you will come across are fried,  but these potato wedges are baked.

Potato wedges, or Jo Jo Potatoes as I like to call them, are perfectly seasoned and baked until golden.  Crispy on the outside and fluffy on the inside. They will be a hit with your whole family. 

To be more precise, they are brushed with olive oil and melted butter, tossed in seasoned flour and then baked to perfection. They are slightly crispy on the outside and full of soft fluffy potato on the inside.

How to cut potato wedges?

It is important to get the potato wedges the same size. This is because you want them to bake at the same time. If they are all different sizes, they will cook differently.

To get the perfect potato wedges, first cut the potatoes in half lengthwise. Then cut those halves into thirds. This will give you six wedges per potato.

What temperature do you bake potato wedges?

For this recipe, you’ll want to bake the potato wedges at 400 degrees. To get them extra crispy, I like to turn on the broiler for the last few minutes.

What do you serve with jojos?

As mentioned before, chicken tenders are always a favorite.  But you can basically serve these with anything that you’d serve french fries with. Burgers, Italian Beef Sandwiches , fried cod as well as good ol’ fashioned fried chicken.

And don’t forget the dipping sauce! Ketchup, ranch and honey mustard are a favorite. As is Alabama BBQ and, of course french fry dip.

Ingredients

  • non-stick spray
  • 2 tablespoons butter (melted)
  • 2 tablespoons avocado oil (or canola)
  • 4 russet potatoes (cut into 6 wedges)
  • 1/4 cup all purpose flour
  • 2 teaspoons seasoned salt
  • 1 teaspoon paprika
  • 1/4 teaspoon cayenne pepper

Instructions

  1. Preheat oven to 400 degrees. Spray a baking sheet with non-stick spray, set aside.
  2. Mix butter and avocado in a bowl. Brush mixture onto the potatoes.
  3. Combine flour, seasoned salt, paprika and cayenne pepper in a resealable plastic bag. Add potatoes to bag and shake to coat.
  4. Bake on prepared cookie sheet for 20 minutes. Turn and bake for 10 more minutes.
  5. Turn on the broiler and broil for 5 - 7 more minutes or until browned.
  6. Serve hot.

    This was a legacy. Even my picky partner asked about the recipe. The fluff was great. I used half the recipe at a time. Whatever was left over I added it together on the back side of my potato for the perfect cloudy crunch.

    After reading the recipe and comments, I guessed that perhaps the problem some were having was due to too much flour/coating sticking to the potatoes, which would make them gummy and gross.
    So, I used rice flour (which is lighter/more delicate than regular AP flour), and after dipping them, gently knocked the wedges together to shake off excess coating.
    It worked! These were very respectable oven “fried” jojos.

    After reading the negative comments… I’m wondering if it might be the size of the potatoes you were using. I used 4 very large Idaho potatoes. If you are using smaller potatoes, maybe there is just too much flower/spice for them? Unsure, however for those that didn’t like the recipe.. I say try it again! We all loved them, and I willl definitely make them again!

    I second what many others are saying. I followed the recipe exactly. The flour did not bake out of the potatoes fully. I even sprayed them with oil like it said in the notes if they are a little on the dryer side. I did not expect them to be super crispy like if they were fried, but these were barely tolerable.

    Sorry to hear that! I literally just made them again tonight to see what could be happening. And again my family loved them. Obviously they won’t be as crispy or “fried” tasting as jojos because they are baked. If you are having issues with them being too dry, spray them once more with non-stick spray before broiling.

    That’d be a NO for us. Follow the recipe to a tea, but they did not brown at all. They turned out to be chalky and required pan frying to crisp up to anything near JoJo like.

    Mel, oh no! This is one of our favorite recipes and I make them a few times a month. While, they don’t get as crispy as traditional french fries because they are baked but they should be a little crispy on the outside when cooked. Sorry that you weren’t happy with it!

    JoJos are very common here in Montana. I grew up with them and eat them regularly. The best ones seem to come out of Butte. They are traditionally deep-fried and served with sour cream. This recipe is outstanding and is unique because the jojos are baked. I’ve made this probably 15 times. This is one of my favorite recipes I’ve found on Pinterest!
