This Curry Aioli is quick and easy! Made with mayonnaise, garlic, lemon and curry powder it is great with potatoes, chicken and seafood.
When it comes to condiments, aioli is one of my absolute favorites. It’s easy to make, creamy, versatile and can be made into just about any flavor you think of. I’ve made traditional garlic aioli, harissa aioli and decadent truffle aioli. I’ve even made a bacon version and put it on a burger.
Like I said, it’s kind of my favorite.

Now, I do make a “cheater’s” version of aioli that uses mayonnaise as the base. This makes this condiment ridiculously easy to make. Let’s talk about what you’ll need to make it.
Curry Aioli Ingredients:

- MAYONNAISE: The base of the aioli. Use your favorite brand, I prefer Best Foods (Hellman’s for those of you east of the Rockies).
- LEMON JUICE: Will add acidity and brightness to the aioli.
- OLIVE OIL: Helps make the aioli even smoother.
- GARLIC: A classic in aioli. It is raw in this recipe so if you’re sensitive to it, start with one clove then add another if you need more garlic flavor.
- CURRY POWDER: You can make your own homemade curry powder or buy your favorite blend.
- SALT: Will bring out the flavor of everything.

When I said before that making this curry aioli is going to be easy I wasn’t kidding. All you need to do is combine all of the ingredients in the bowl and whisk until smooth. The hardest part is letting it set for a bit so that the flavors can meld.

Combine all ingredients together in a bowl. 
Whisk ingredients together until smooth. Refrigerate for 30 minutes.
Storage and Leftovers:
Keep any leftovers in the refrigerator and use within three days.

Recipe FAQ:
Traditionally aioli is made of raw egg yolks, olive oil, lemon and salt that are whisked together until they are emulsified. To make sure that there is no worry about raw eggs, this recipe replaces them with mayonnaise.
Curry powder is a blend of spices like ginger, garlic, coriander, cumin and fenugreek. It gets the characteristic yellow color from turmeric.
